I'm that person who could eat pancakes every morning. With these recipe you can stir some fiber and protein into your usual pancake. These light and fluffy pancakes will keep you full and satisfied . You won't believe how good they are.
Ingredients:
2 banana
2 eggs
150 grams of oats
120 millilitres of milk ( You can use coconut, soya or any milk. If you want you can do half milk half water as well.)
1 teaspoon of baking powder
Vanilla extract
Pinch of salt
1 teaspoon of cinnamon
Add all the ingredients to a blender and blend on high until completely nice and smooth. You can use oat flour if you already have. ( You can add whole blueberries to your mix- really delicious)
Heat a large non-stick frying pan over a medium heat and brush with oil.
Drop the pancake mix into the pan in 2-tablespoon portions, cooking 3 at a time. Cook until bubbles appear on the surface, the edges begin to look dry, and the bottoms are golden-brown, about 3 minutes. Flip the pancakes and cook until the other side is golden-brown, 2 to 3 minutes more. Repeat the process with some oil and the remaining pancake mix.
Serve with maple syrup Or jam or simply just plain.
