Ingredients
Biscuits base:
200 grams of biscuits
30 grams of butter
Cheese filling:
250 grams of mascarpone
180 millilitre of whipped cream + 20 millilitre more
100 grams of white chocolate
50 grams of flour
50 millilitre of lemon juice
50 millilitre of vanilla yoghurt
2 eggs
Vanilla extract
Fruits( I used blueberries and raspberries, but you can do without as well)
Preheat the oven to 180 Celsius . Butter the bottom of a round cake pan.
Tip the biscuits and melted butter into a food processor, then blitz to make fine crumbs. Press into the bottom and sides of the tin with a help of a glass and bake it for 10 minutes.
Melt the white chocolate with the 20 millilitre of whipped cream under steam. Mix in with the mascarpone, add the flour to it and mix till it is lump free. (If you want your filling to be sweeter, you can add some powder sugar to the mixture)
In a separate bowl mix the whipped cream with the lemon juice till it starts to thicken than add the vanilla yoghurt and vanilla extract to it. When it is all mixed together add the two eggs one at a time and mix it well.
Mix the two creams together and add the fruits if you want to use any. Pour the mixture to the already baked biscuits base.
Put the cake pan into another bigger pan and pour some extra hot water to it.
Bake the cake on 180 Celsius for 30 minutes, than take it down to 150 Celsius and bake for another 25-30 minutes, till it is all set.
Leave it to completely cool down, than place it to the fridge for another 8 hours. Decorate with some fruits.
