Kaiser Roll



Ingredients

  • 350 grams of flour 
  • 1 teaspoon of salt
  • 15 grams of fresh yeast(or 1 pack dry)
  • 110 millilitre of warm water
  • 120 millilitre of warm milk
  • 40 grams of butter
  • 1 teaspoon of sugar
  • 1 egg for the egg wash
  • sesame seeds for sprinkling (I used mixed seeds)




Melt the butter and mix together all the dough ingredients by hand or a help with a stand mixer. Knead the dough about 10 minutes. 


Cover your bowl or bucket, and allow the dough to rise until noticeably puffy and doubled in size, about 1 hour. 

Transfer your dough into a lightly floured work surface. 

Preheat your oven to 180 degrees.

Divide the dough into six equal pieces. Shape the pieces into round balls. Roll a piece of dough into a rope about 12 to 15 inches in length. Grasp both ends and make a simple, loose overhand knot, leaving a bit of space in the middle and two long tails of dough. Take each tail of dough and wrap loosely around the loop part of the dough, pinching the ends together on the bottom.  


Line your pan with baking paper and transfer your rolls. Cover the rolls and leave them to rest for 10-15 minutes.  Make your egg wash with one egg,  brush the top of the rolls and sprinkle them with the desired seeds. 


Bake them for 20-25 minutes, till they are golden brown.
