In a blender, process the oats. If you have oat flour you can use that instead. In a bowl mix the processed oats, milk and eggs together until blended and completely smooth.
Lightly oil a small nonstick pan, heat over medium-high heat. Ladle the pancake mix into the pan with a small ladle, immediately tilt and rotate the pan to spread the mix evenly over the bottom.Cook the crepe until the underside is lightly browned, about 30 seconds. Using a small spatula to lift the edge of the crepe, quickly grasp and flip the pancake with the help of the spatula.
You need to be super careful!!! These pancakes are more delicate than the normal pancakes. Cook until the second side is lightly browned, about 20 seconds longer. Slide the crepe onto a plate.
